sprout top soup

My veg box had more sprouts, but this time the whole plant, so I set myself the task of figuring out what to do with leaves AND sprouts.

This soup is the first experiment with cooking with the leaves: sprout leaves, the half dozen mushrooms from my box, tomato, rice soup. I sautéed an onion, finely chopped mushrooms, thinly sliced sprout leaves, smoked salt, a hefty amount of smoked paprika, garlic powder, and caraway seeds, in the big pot for about 10 mins. You can add whatever other veg you have kicking around. I added a 400ml can of tomatoes, 3 empty cans of water, 2 veg stock cubes and 2/3c of white rice. I brought it to a boil and let cook until rice was done, added another glug of olive oil, and let simmer on very low for another 20 mins while I did other things. This soup tastes even better the next day. I enjoyed this with a tiny avocado from my veg box, which is the perfect size for smashed avocado for one.
