
This was a breakfast adventure with Cate’s instant pot. It is black rice, salted pistachios, raspberries, tahini, honey, mint, soy milk. Cate put the rice in the instant pot, 18 minutes on the multigrain setting, then natural release, but you can cook black rice anyway you want. We topped the rice with salted nuts (salted nuts is key, the salt gives the necessary kick and I have to say pistachios are kinda amazing here), berries (raspberries are gorgeous with this), tahini, a bit of whatever sweetener you like(we used honey, but I think maple syrup or date syrup would be fabulous), and loosened up the whole thing with the kinda milk you like to use.
