
Continuing on the fast and easy pastas with yummy crouton topping, I made this one from the lovely cherry tomatoes and courgette/zucchini in my veg box and tossed it with a bit of feta and a splash of orange juice from the oranges in my box. So good. Here is what I did.
Chop the cherry tomatoes in half and chop the courgette/zucchini the size of your cherry tomatoes. Toss with a very large splash of oil, some garlic (fresh or powder), Aleppo pepper, salt, and pepper. Put in all in a baking dish and roast at 200C/400F until nice and blistery.
Put some pasta to boil in a pot of salty water. When pasta is done, drain but save a cup of pasta water. Add some Greek oregano to roasted veg, a spoonful of tomato paste, and a splash of citrus juice. Stir and add pasta. Loosen with some pasta water. Crumble in non-dairy/dairy feta and some parsley and mint. Top with some croutons made from sautéing herbed breadcrumbs in oil. Done and done.
