root veg with couscous

Since the days are darker, I’m reposting this sunny, bright lunch staple that makes use of wonderful vegbox root veg like potatoes, parsnips, carrots, celeriac (if you have it), and I always use fennel, as well as vegbox oranges and lemons. This wonderful Anna Jones recipe is a flavourful, savoury, turmeric-spiked, citrusy salad that is nice warm or cold and sits well for a few days in the fridge, so makes for a great packed lunch or a yummy side. She used butterbeans, I used chickpeas, but you can use whatever pulses or protein you like. Here is the recipe:
