potato, bean, tofu salad with harissa dressing

The photo is a little blurry, but the salad is super yummy! It was a treat to have purple potatoes in my veg box this week, so I had a really pretty and colourful salad. I also had green beans and some super pretty purple and green lettuce in my box, so I thought I would pair it with some smoked tofu and make a harrisa dressing. Here is what I did.

Chop and boil potatoes in a pot of salty water. At the last minute, add green beans which I trimmed and cut in half. While the potatoes and beans were cooking dice the tofu and sautéed it in some neutral oil to give it a bit of a crisp. Halloumi would also be nice or any other protein you like. Make a quick creamy harissa dressing by whisking together 1tbsp of harissa, 2tbsps of tahini, 3 tbsps of olive oil, the juice of half a lemon, a bit of garlic, and salt and pepper. Whisk up to 2tbsps of water to thin it out if needed. Drain potatoes and beans, add dressing to hot potatoes and beans and mix gently. Add your protein and continue to mix. Let the whole thing cool completely in fridge before adding lettuce and mix well again. Done and done!
