
I had a tiny broccoli in my veg box which was perfect for some broccoli carrot peanut noodles, but I wanted a use for the large stalk I had leftover. I decided to make a nutty, sorta cheesy, vegan spread for bagels/toast. It isn’t a looker, but it is rather nice! Here is what I did.
I chopped up the large stem and boiled it until soft. I put it in my mini food processor with a handful of mixed nuts (cashews, almonds, Brazil nuts, and walnuts), fresh chives (you can add whatever herbs you like), salt, a bit of Dijon (maybe half a tap), a sprinkle of nutritional yeast (maybe a tbsp), and a healthy squeeze of lemon juice (at least 2 tbsp). I pulsed that a couple of times, then added some olive oil. I pulsed again, checked seasonings, and when it looked done I added some pepper and fennel seeds. Done and done.
