breakfast peppers

I had a few lovely long green peppers in my vegbox and I wasn’t quite sure what to do with them. I decided to stuff them with things I might like for breakfast and have stuffed breakfast peppers! What I did is get some vegan sausage and break them into tiny pieces and mix them into whatever scrambled egg mix (vegan or egg) you like with a bit of non dairy/dairy milk. I broke up a slice of bread into small pieces and added it to the scrambled egg/broken sausage mix with some salt and pepper and mixed until I had a mash like porridge. I stuffed my peppers with this and topped with tomatoes and nondairy/dairy cheese and baked at 180c/350f for 15-20 mins until brown and bubbly. Done and done!
