coconut peanut rice

If you like peanuts, this is quick and easy and works with any nice veg and protein you have kicking around. I had lovely green beans and carrots from my veg box and some smoked tofu in the fridge. Here is what I did.

Put some rice to cook, however much you want and however you like to cook it (I did this in my instant pot, but packs of pre cooked rice or rice in a rice maker or whatever works). While you are sorting your rice, sauté up the veg and protein that needs sautéing. My green beans and tofu needed cooking, but I decided on fresh grated carrots. Green onion and cilantro would also be nice as fresh options. In a bowl or blender, add a cup of coconut milk (use it from a can or I use powdered coconut milk to make a cup of coconut milk which I find super handy rather than wondering what to do with the rest of a can of coconut milk), a heaping tablespoon of minced garlic and ginger purée, 1/2 c of peanut butter, tbsp soy sauce, tbsp of sesame oil, squeeze of lime, and blend until mixed. Taste and adjust seasonings.

When your veg and protein are cooked, add cooked rice and mix. Add coconut peanut sauce bit butter but, until you get the desired flavour and amount. You don’t want it downing one sauce. Take it off the heat and add cold veg and any herbs or nuts you might want. This is nice hot or cold. Done and done.
