In anticipation of it getting extremely hot, I did some midnight baking when it was cool. Also I knew my friend and I would want cake to graze on when we were hot and bored and sick of salad. Also I had gorgeous veg box plums I needed to use and so I figured I would make Smitten Kitchen’s dimply plum cake, since what a horrid heat wave calls for is a naked cake that can sit on the kitchen table and two people can nibble away at over the course of a few days. This is a lovely cake for bored hangry people with plums and a busy kitchen table. Here is the recipe. I used the butter and eggs, but a non-dairy butter would work and I suspect a flax egg sub would work, but I haven’t tried it. Here is the link to the recipe:
