
I had loads of fluffy kale and tiny delicious new potatoes in my veg box, and since it is so hot, I decided to make a simple salad. This salad works if you really love kale already. If you don’t, this might not convert you. You can add non-dairy/dairy feta, faux/real tuna with Mayo, olives, tomatoes, or whatever else you want to this, but it is okay just plain. Here is what I did.
Chop potatoes into salad-sized pieces and set to boil in salty water. While the potatoes are cooking, whisk the zest and juice of half a lemon with salt, pepper, and 2 tablespoons of olive oil. Tear the kale into bite-sized pieces and massage oil and lemon dressing into the kale for a few minutes (the longer the better). Make a simple mustard dressing by whisking the juice of the other half of the lemon, 3 tablespoons of olive oil, 1 teaspoon of whole grain mustard, 1.5 teaspoons of Dijon mustard, 1 teaspoon of sugar, salt, and pepper. Taste and adjust if needed.
When the potatoes are tender, drain, add lemon mustard dressing and mix well. Then add to kale mix and let sit for at least a few hours. Done and done.
