plum and apricot squares

So, I had a lovely collection of plums and apricots in my veg box. Some I just snacked on and some went into this favourite recipe by Smitten Kitchen.

I did two versions of it, dividing the base/crust into my very small loaf pans. In the first pan is her pistachio apricot (which I love) and I made the full filling and froze half for later. The second pan is what you see here: plum apricot squares. I swapped the pistachio and used almond instead for the filling. Again, I made the full filling recipe and froze half for later.

This is a wonderful, rich, buttery treat and you only need a thin slice with tea to be perfectly happy. And I say that as someone who is cheerfully greedy. But also someone who has multiple cups of tea.
