
In my vegbox was a lovely head of broccoli. One of the great ways to use some of the head and all of the stalk is to make a pesto. It is super easy and you can basically add the flavours you like. Here is what you do.
Put your pasta to boil in a pot of salty water. Then bring another pot of water to boil and add the broccoli you have (fresh or frozen) for a minute or so to blanch it. Drain the broccoli under cold water. Add broccoli, some spinach if you like, at least 2 tbsps of lemon juice, a big glug or 2 of olive oil (about 1/4-1/3 c), the herbs you like (I like parsley, basil, oregano, and fennel) salt, pepper, and as much garlic as you like (2 cloves, a teaspoon of garlic purée, etc). Pulse with your food processor but make sure you still have some small pieces for texture. Add some Aleppo pepper and the non-dairy/dairy cheese you want (Parmesan/feta/nutritional yeast). Toss with warm pasta. Eat hot or cold.
