

I’m always glad for potatoes in my veg box because they are my favourite. Today I tried something different with my usual aloo recipe that I make about once a week (I have 3 potato recipes that sit in rotation: this aloo one, colcannon, and Anna Jones’s Greek potatoes). I decided to make a pasty with it, but instead of faffing around making pastry or buying pastry, I used frozen parathas. I saw this on Instagram and it is absolutely GENUIS. First of all, parathas are so much yummier than any pastry with this stuffing. Second, parathas are individually wrapped and defrost in less than a minute which is awesome. Third, they are just way easier to manage than pastry. All you do it wait a minute or to for the parathas to defrost and be a bit flexible (keep them on the plastic) jam your cold filling on half of the circle of paratha trying not to be too greedy because you still have to fold and press, and then use the plastic to fold the paratha in half and pinch the edges to close. Lay the ones you want to bake on a tray and brush with egg or milk or whatever for a golden top and bake at 200C/400f for about 20 mins or until golden. Put the rest in the freezer until you are starving again. Done and done.
I’m pretty sure all my potato recipes are going in the paratha pasties now.
