
It tastes a whole lot better than it looks, I promise! I had a small cauliflower in my veg box this week and decided to try this recipe, but instead of tofu, I added some veg box carrots and potatoes. This was absolutely marvellous. However, I did make the following changes.
I didn’t do the pickled onion, since I have some ginger jam and other chutney. Also, I tossed my cauliflower and carrots with some oil and korma curry powder before roasting. I cubed and boiled some potatoes and added them when I added the roasted cauliflower and carrots. I did add 2 tablespoons of lemon juice, since I found the acidity helps. This was lovely and satisfying.
