spinach pie

A good friend of mine has made this lovely pie for me many times and I’ve finally got around to making it for myself. This is easy and delicious. I make it in my big cast iron pan. My stomach isn’t great with the volume of alliums in the original recipe, so I’ve reduced it to just a small red onion, a bunch of garlic, the herbs I like, and some allspice because I like that with this. The original calls for an egg to bind things, and that is what I used. However, I suspect a vegan substitute that works to bind, like flax or chia “egg”, would work fine here.
