
Sweet potatoes are always the last to get used in my veg box because I think I don’t like them even though I do, so I tend to scramble for a recipe. Today I tried Nigella’s sweet potato Mac n cheese. It is delicious. Is this my favourite Mac n cheese? Probably not. But it is a really nice Mac n cheese that has a surprisingly large amount of sweet potatoes. It is most certainly nursery food, and I think would be a hit with people who like a little sweetness in their food or don’t want a giant bowl of really super rich pasta. You can use non dairy butter and oatmilk to make the white sauce and any nice melty, flavourful non dairy cheese here. Be sure to pick a non-dairy/dairy cheese mix that has some bite and don’t skip the mustard (Nigella recommends feta and mature cheddar), as this balances the sweetness of the sweet potatoes. In case you think you can skip a step and just eat it after making the white sauce or just microwaving it, no. It needs to be baked. It is not awesome unbaked. It is MUCH nicer baked.
