chinese 5 spice soup

So I had a few odds and sods to use up from my veg box and I don’t like to let any of my nice veg go to waste, so I decided to make some clear soup with lots of ginger from my box and Chinese 5 spice, which I really enjoy and don’t use nearly enough. I had some great veg to add to this: mooli (a kind of big long radish that looks like a white carrot), carrot, part of a red pepper, onion, and the remains of some curly lettuce for greens. I also added fresh ginger, fresh coriander, and a bit of miso and leftover tinned tomatoes (maybe 1/4c) and a stock cube. Here is what I did. I sliced the onion, carrot, and mooli with my mandolin. I set the onions to sweat with some neutral oil and Chinese 5 spice. Then I added my red pepper, ginger, and mixed it around a bit. Then I added water, miso, tomato, and the stock cube and brought it all to a boil. Then added the carrots and mooli and let it simmer for a bit while I cut the lettuce and coriander. I added the lettuce and coriander and let it very gently simmer and tasted to adjust the seasoning. I like a lot of ginger and 5 spice, so I added more and then added some more salt. This would also be nice with some noodles, but I just had it plain right now as a mid morning snack. Done and done.
