orange and turmeric noodles

With fresh turmeric, orange, fennel, potatoes, and carrots in my veg box, this bowl of sunshine is exactly what I wanted. It is a modification of Anna Jones’s brilliant root veg dish: a completely flexible wonder that can can accommodate all manner of root veg, beans/pulses, and small pasta. It is bright in colour and flavour as it doesn’t ask for onions or garlic or stock cubes. It works with the root veg you have kicking around, an orange and a lemon, chilli pepper of your choice (I used Aleppo pepper the whole way through), cumin (I used ground), whatever turmeric you have handy, any small pasta you fancy (I used broken spaghetti), the beans/pulses you love (I used black eyed peas), parsley, and olive oil. Also, this is just as lovely cold as a pasta salad as it is warm. I had some warm right after I made, but the photo is it the dish cold as lunch and it is just as delicious.
