
I felt like I needed some sunshine in a bowl, so I used the bright and sunny oranges and fennel in my veg box to make this simple salad that is a little bowl of cheerful. Here is what I did.
Thinly slice a fennel bulb (I used a mandolin) and put it in a bowl. Section an orange over another bowl letting the excess juice drip in. Add the orange sections to the fennel bowl. Juice half an orange or a tangerine, and a lemon. Add a tablespoon of olive oil to the juice, a pinch of salt, some pepper, and whisk. Toss with the fennel and oranges sections, and refrigerate for at least 20 mins. Done and done.
