cucumber, tomato, and herb salad

This salad is a celebration of friends. The recipe comes from a dear friend who provides love, inspiration, and exciting spices. The herbs are a gift from another dear friend who showers me with care, laughs, and endless support. And the cucumbers are a gift from a very generous neighbour who leaves me lovely doorstep surprises. The tomatoes are from my lovely veg box. This is an easy salad and lick the bowl kinda delicious. Here is what you do:

Slice thinly a large cucumber, or a bunch of baby ones to make the equivalent of a large cucumber. Dice up 2 or 3 large tomatoes or the equivalent in cherry or grape tomatoes. Dice up 1/8-1/4 of a small onion (depending on how much onion you like). Put the veg in a big bowl. In another bowl add about 1/4 cup of non-dairy of dairy sour cream or yogurt (if you’re using non dairy, I would use oat or soy or something neutral, not coconut, so it doesn’t come out tasting of coconut), 1.5 tablespoons of white wine vinegar (or any nice vinegar), 1.5 generous tablespoon of olive oil, salt, pepper, and some chopped herbs (dill is nice, but any chopped herbs will do). Mix the dressing up and add it to the veg. Mix around and let sit for at least an hour in the fridge. Garnish with addition herbs, and extra salt and pepper if needed before serving. Done and done!
