potatoes and beans

I love potatoes and the potatoes in my veg box are always fantastic. This week I also had some gorgeous garlic, so I decided to make one of my favourite potato dishes: Anna Jones’s Greek potatoes. She adds whipped feta, but any crumbled non-dairy/dairy cheese is nice here. I decided I wanted a protein boost, so I added a can of black eyed peas, but I think any pulse/bean/tofu/ or even an egg would be nice as added protein. Here is the recipe:
