slaw salad

Adventures with my veg box: Kohlrabi is something I had never bought or really heard of until I had a veg box. A number of my British and German friends just love it, and I can see why—it is a lovely crisp, mild, almost sweet brassica and makes for a nice coleslaw salad since my veg box also had some fat carrots and lettuce. I paired the slaw salad with some cheesy bbq spiced veg box sweet potatoes. Here is what I did.
For the slaw salad, I sliced the kohlrabi using my mandolin and then chopped it into matchsticks. I used my veg peeler to make ribbons with the carrot. I added a big dollop of vegan mayo, scant tsp of whole grain mustard, splash of white wine vinegar, salt, pepper, and a very generous amount of herbs (I used a lot of parsley, and a big hit of a herb mix I have called sandwich sprinkle) to a bowl and whisked it together. Tossed the mayo dressing with the carrots and kohlrabi and dumped it on the lettuce.
Sweet potatoes: sliced 2 or 3 sweet potatoes thinly on the mandolin. Sliced one small onion thinly on the mandolin. Tossed the onion and sweet potato with some oil, tbsp smoked paprika, tsp garlic powder, tsp Aleppo pepper, salt, pepper. Put a layer of onion and sweet potato, then a layer of non-dairy/dairy cheese, then a layer of onion and sweet potato. Baked in a preheated oven at 180C/350F for 40 mins. In the last 10 mins, pulled it out and top with a bit more cheese. Done and done.
