carrot ginger soup

I had great carrots in my veg box that needed using. I also bought some fresh smoked garlic and ginger, so decided to make carrot ginger soup. There are a million recipes for carrot soup out there, but I wanted a soup that let me taste the amazing handful of excellent ingredients I had. This is what I did.

I set a handful of cashews to soak in a mug of boiling water (for about 30 mins). While the nuts were soaking, I sautéed a small onion, a thumb of ginger, and a few cloves of my smoked garlic as a heap in my small food processor. When that was golden, I added 5 or so large carrots chopped and a chopped small potato and added water and salt until it was covered by 1/2 inch. I let that all boil away until everything was soft. When it was soft, I added everything (including the nuts and their soaking liquid) to a blender and blitzed on the highest speed until smooth. Add more water to get the texture you want and add salt and pepper if needed. It is a really lovely simple soup!
