curried mash on a bun

I’ve been craving pav bhaji for a while, and even though I found a recipe that looks promising, I haven’t had the energy to make a batch. This isn’t pav bhaji, but the idea of a warming spiced veg mash on a bun seemed like a good idea. This is an easy way to use up some leftovers, especially if you don’t want to make up rice. This is leftover curried potatoes I just chopped quickly in my mini food processor and then reheated and put on a toasted buttered bap/bun, which you can eat open faced or like a proper sandwich. I topped mine with a simple coriander chutney made from a big handful of coriander, a clove of garlic, a green chilli, a small handful of peanuts, the juice of a lime, some salt, and some oil. I just blitzed all that in my mini food processor and it was good to go. I like mine on the leafy side, but you can process it more so it looks more like a chutney (I have some like that to, which I can drizzle on things). If you like coriander, this is a great condiment for sandwiches, beans, whatever.

On the side is mango sorbet using the Yonanas and the mangos from my veg box. Yup, breakfast ice cream. For those interested, 2 mangos filled the average 650ml plastic rectangular takeaway container with sorbet about 2/3-3/4 full and I added nothing but mangos. It was really nice.
