salsify, potato, and cheese puffs

Continuing on with my experiments with salsify, I decided to mash some with my veg box potatoes, spring onion, parsley, and cheese for some super fun puff pastry snacks, sorta like a good ol’ cheese and onion pasty. I think the salsify gives a bit of an exciting twist on the traditional cheese and onion pasty. Also, mine looks nothing like a pasty, or a meatless sausage roll. It is just yummy root veg in pastry. I gave my filling a wee bit of a mash, but there were still more than enough diced root veg to make it not feel like mash in pastry. Here is what I did.

Dice up the equivalent of 2 large potatoes and 3 salsify roots and boil them in a pot of salted water. When they are tender, give them a bit of a mash with a big handful of non-dairy/dairy cheese (something strongly flavoured like a cheddar), some non-dairy/dairy butter, and a little splash of non-dairy/dairy milk if needed. Add a bit of finely sliced spring onion and a generous handful of fresh parsley and stir. Let it cool until cold and then stuffed it in some store bought puff pastry, however you want to make your shapes, and baked at 200C/400F until golden, about 15-20 mins. Done and done.
