corn, kale, and potatoes

I had some corn in my veg box and decided rather than just eating on the cob, I would try something else. I decided to make sort of a spicy corn stirfry/salad with leeks, kale, and potatoes also in my veg box. It turned out better than I expected. Here is what I did.

I chopped about 7 small potatoes and a maybe three or four handfuls of curly kale and put them to boil in a pot of salty water.

I sautéd a small leek in a pan until they were soft, and then added the kernels from 2/3 big cobs of corn and a tsp of smoked paprika and a tsp of chipotle flakes. If it looked like it was getting dry, I added a bit of the potato water. I sautéd it all until the corn was cooked, and then put them in a bowl.

Once the potatoes and kale were done, I added some more oil to the corn pan and gave the potatoes and kale a quick fry to get a bit of colour and then took them off the heat, added the corn back to the pan, and finished it a tablespoon of non-dairy/dairy butter and a tablespoon of dairy/non dairy sour cream, some parsley, and a squeeze of lemon or lime and mixed it all up. The residual heat from the pan and hot veg melts the butter and sour cream, so you don’t need any additional heat. Done and done.
