
Yah, this is one of those marmite things. Cold puréed tomato soup. You love it or hate it. I love it. I used 6-8 small/medium veg box tomatoes, a small cucumber and roasted red peppers (about the equivalent of one red pepper) gifted to me by a neighbour, 1-2 stalks of celery from the garden, parsley, 1 tsp (or more or less) chipotle chili flakes, 1/2 tsp paprika (or more or less), 1 tbsp red wine vinegar, and lots of olive oil. I dumped the chopped veg and vinegar and a big glug of oil in a food processor (a blender will also do) and blitzed it until I had the consistency I liked. I stirred in another glug of olive oil chipotle flakes, paprika, parsley, salt, and pepper. Taste and adjust seasonings. Let sit in the fridge for a hour or overnight. Done and done.
