It has been very warm like summer the past few days and my veg box had lovely late summer veg like courgette/zucchini and green beans. I decided to sauté them with some of the lovely mushrooms from my box and also with a patty pan squash I was gifted from my neighbour (from her allotment) and some fresh herbs from my friend. I sautéed the veg in a hot pan (starting with the mushrooms, then adding the green beans, then the squash) and I finished it in the pan with a squeeze of lemon, bit of non-dairy/dairy sour cream, chopped fresh herbs, and salt and pepper. Pretty simple and yummy. Done and done.
