
Today I wanted comfort food. I decided to use my veg box potatoes (always a comfort), spinach (always gorgeous), and onions (always nice), to make something like a vegan sausage roll. Okay, it is nothing at all like a sausage roll. Basically this is yummy savoury zesty mash in puff pastry. Here is what I did.
Set some cubed potatoes (cube maybe 5 small/medium potatoes) to boil in salted water and boil until tender enough to mash. While the potatoes are boiling, sauté a chopped onion in oil with a bit of salt until golden, then add chopped spinach (maybe 2 cups) and cook until wilted. Take potatoes off the heat, mash with a bit of non-dairy or dairy milk, a teaspoon of mustard, and a teaspoon of marmite. Just trust me on the marmite, it gives a zip and ramps up the cheesy flavour, rather than making the whole thing taste like marmite. If you’re worried, use half a teaspoon, then taste it and maybe add the other half. Add two handfuls of non-dairy or dairy cheese, pepper, and stir. Then add the onion and spinach mix, stir, adjust seasonings, and let the whole thing cool. It needs to cool otherwise it will melt your pastry.
Roll out your puff pastry and put the cold filling in a long line down the centre of the rectangle, then bring the sides up to the middle. Cut the log into slices and bake at 200c/400f for 15-18 mins or until golden.
