
I was feeling like a treat, so I bought some puff pastry and decided to make something like toaster strudels. For the filling, I decided to use the pretty plums and pears from my veg box which I thought would be delicious with some cardamom and star anise. And it really really was. I don’t think these treats will last the night, they were so yummy. Here is what I did.
I chopped up a pear and a few little ripe plums and put them in a small pot with about 4 split cardamom pods and 2 star anise. I added maybe 2 tbsps of white sugar and a tsp of cornstarch and let it cook on medium until the fruit released all the liquid and thickened up into a lovely mush (maybe about 10 mins). I took it off the heat and let it cool.
I set the oven to 200c/400f and divided the puff pastry into 8 equal rectangles. I put a quarter of the plum/pear mix in the centre of 4 rectangles and spread it around leaving a boarder. I put the remaining rectangles on top and sealed the edges by pressing with a fork. I baked for 18 mins and when completely cooled drizzled icing on top.
