
I had a lot of gorgeous carrots in my veg box, so I decided to try out David Lebovitz’s French grated carrot salad recipe I had seen a million years ago that I thought looked good. And it was really good. It was also super easy and really nice with some young broad beans from the garden tossed in. It is beautifully herby (I used parsley and chives), and the savoury acidic dressing balances the sweetness of the carrots. He notes two important things for this salad: grate the carrots (so a food processor really speeds things up here) and you shouldn’t over dress it. He is absolutely right on both counts. This is a refreshing change for a picnic if you are sick of coleslaw, but you still want some crunch. The link to recipe is below:
