broccoli, lentil, and rice salad

I had lots of lovely greens in my veg box, namely purple sprouting broccoli and rocket/arugula, so I decided to make an easy grain salad with grains, greens, lentils, and some nuts and seeds. Here is what I did.

I put 1/2 cup of rice in my rice cooker and set it to cook. While it was cooking, I chopped up my broccoli into very small pieces and quickly sautéed it in a large pan with some lemon pepper and garlic powder. When it is nearly done, I added the equivalent of 1/2 can of brown lentils (since I had leftover cooked brown lentils) to the pan and sautéed them to warm them up, and then took everything off the heat.

Then I made the tahini dressing. Pick any tahini dressing you like, but basically it is about 1/3c of tahini, 1/2 a lemon, 1/4c water, 1/4 tsp salt, 1tsp sugar, 2 tbsp olive oil, and 1 tsp garlic powder. Whisk all ingredients until smooth and add more spices and lemon to taste. I also add Aleppo pepper and sumac. You might want more dressing because it is delicious.

When the rice is done, mix it in the large pan with the lentils and broccoli. Then pour the dressing over and mix everything together. Sprinkle with nuts and seeds (I used chopped almonds and sesame seeds) and when it is room temperature, add rocket/arugula. Done and done.
