
I admit when I saw this recipe by Anna Jones, I was deeply sceptical. It didn’t call for onions, garlic, or tomatoes which made me worry that it wasn’t going to hang together at all. Also the original calls for swede, which I don’t like. I didn’t have any celeriac, but I figured I had gorgeous veg box potatoes and sweet potatoes I would use instead of celeriac and swede, and I had the necessary carrots, orange, lemon, and fennel also from my veg box. And I had all the spices and giant couscous. Oh, I didn’t have broad beans, but I had posh chickpeas which I much prefer. I know, this feels like I’m off to a very bad start with a recipe I already believed was doomed to fail.
How wrong I was. This recipe is simply magnificent. Really. I cooked the giant couscous according to the package and not the recipe, but apart from that, I followed the instructions and it is simply and utterly magnificent. It is luscious, bright, balanced, and full of flavour. You should make this.
