
This week I decided to try my hand at gnocchi since I had a 1lb butternut squash and some potatoes in my veg box. I’ve not made this before and this recipe isn’t too bad. I think any gnocchi recipe is going to take some time and effort. Nothing was hard, it just takes a while. Also, I think the kind of potato matters. It might be a little lighter and fluffier with a different potato. I used the egg, but I substituted nutritional yeast for the Parmesan cheese. In any case, it makes a ton (so I have freezer meals) and it was nice warm carbs on a cold damp night. The recipe is below:
