
Sometimes a cauliflower can be a daunting veg for one person to manage, but as I discovered a small cauliflower is a delicious 2 meal curry commitment. I decided to try out Meera Sodha’s vegan cauliflower korma recipe because I felt like something luxurious and warm. It is wonderful and worth a try.
I made half the recipe because I had a small cauliflower and the recipe calls for 1.6kg of cauliflower. I didn’t have the brown rice syrup, so I used maple syrup. I don’t like raisins (I know, I know) so I added some dried spinach because I like green things on my plate. Fresh/frozen spinach or other greens would also work if you are like me and like some extra greens in your meal. In any case, it is lovely so here is the recipe if you want to give it a go:
