sweet potato, spinach and bean salad

I had some lovely sweet potatoes and onions in my veg box and so I decided to make a smoky grain salad using a small can of cannelloni beans, some frozen spinach, and bulgur wheat. This would work with fresh spinach and any other grains, like couscous. It is just as nice eaten warm as it is cold. Here is what I did.

I made the bulgur wheat in the instant pot (1cup grains:2 cups water, rice setting for 12 mins and quick release), but you can cook it however you normally do.

I sautéed the onions and small cubes of sweet potatoes with olive oil, garlic, and and a teaspoon of chipotle paste on medium/high. Once it was mostly cooked, add some thawed frozen spinach and drained beans and cooked on medium until everything is warmed and nice. I added a bit of water if it got too sticky.

In a small bowl I made a vinaigrette using 1/3 olive oil, 2 tbsp fresh lemon juice, a tablespoon of tomato paste, liquid smoke, smoked paprika, salt, and 1/2 tbsp sugar. Add the vinaigrette to grains and then topped with the sweet potato mix. Done and done.
