purple cabbage tofu noodles

With good news of a new American president, I didn’t have any celebratory blue food for the democrat win, but my veg box did have a wonderful purple cabbage. Purple cabbage makes for a great and fast noodle bowl, so if you’re interested, here is what I did. I sliced my cabbage into thin ribbons, and stir fried in on medium/high heat in rapeseed/canola oil with some smoked tofu and a bit of fermented black bean paste and soy sauce. While that was cooking, I cooked up some noodles, in this case I used sweet potato starch noodles. When the noodles were done, I quickly drained them and added them to the cabbage pan and mixed it around. You might have to loosen it with a tiny bit of water, but my noodles were a bit wet, so it was fine. I topped mine with some raw carrots also from my veg box and some chives. Yum!
