
My veg box arrived with some great corn and I decided to use part of it in a black bean soup and the rest I would make a bit of a cheat creamed corn. The incredibly talented Jocelyn Delk Adams has a blog called “Grandbaby cakes” with some outstanding Southern cooking and I decided to scale down her easy and delicious recipe for fried corn and just finished it with a bit of cream I had kicking around. I didn’t have bacon fat, so I used lemon pepper for flavour hit, which isn’t at all bacon, but there you go. Southern fried corn is amazing, and when you finish it with non-dairy or dairy cream, it also amazing. It is just a great thing to do with corn. Here is the link if you want to try it out:
