
I had an awkward amount of vine tomatoes from my veg box that needed to be eaten immediately. Too many for salad for one, but too few for tomato soup. I also discovered I had a stale ciabatta roll and figured maybe I could put them together in the oven as a yummy dish where the stale bread chunks can soak up some tomato and a bunch of herby infused oil. Turns out, putting stale bread in the oven with bits of non-dairy or dairy cheese, herby garlic olive oil, and tomatoes is a great idea because the chunks of bread become little sponges soaking up the delicious savoury mess when you mix it all around. Here is what you do.
Set your oven to 200C/400F. Oil a roasting pan. Cut your tomatoes in wedges or halves depending on size and toss with a bit of oil and put in the pan. Break up your stale bread in chunks and add them to the pan. Put some olive oil (maybe 1/4 cup for a ciabatta roll) in a little bowl and add some spices that you like. I added garlic and onion powder, dried parsley and chives, and lemon pepper. Mix that around and drizzle over the bread and tomatoes. Bake for about 15 mins until golden. Take out and top with the cheese you like or no cheese at all, and bake for another 5 mins or so until the cheese is melted. Done and done.
