
My veg box this week had lovely radishes which made me remember my friend Sarah telling me how lovely they are thinly sliced on toast with butter. I admit when I heard this, it seems like a sketchy plan, but turns out it is simple and absolutely delicious. Really. I also had a handful of green beans and a couple of mushrooms and they enjoyed a leisurely sauté in olive oil and then finished with a scant teaspoon of whole grain mustard before they ended up on my lunch plate. Along with half and tomato and avocado splashed with balsamic because why not use loads of my veg box treats? Hope you are all having as happy a lunch as me.
