
Kohlrabi is not something I ever had until I had a veg box. It is such a pretty root veg and this week my kohlrabi was a gorgeous purple on the outside. I decided I would use half in a salad because it is hot outside.
The salad I had in mind was a cucumber salad I watched a friend of mine thoroughly enjoy during one of our Houseparty dinner parties, remarking it was “lick the bowl clean” kinda good. She was right. It is also super easy. It is amazing with just cucumbers and tomatoes, but also amazing with cucumbers, tomatoes, kohlrabi and candy cane beets. Here is what she said you need to do.
Slice up some cukes and tomatoes. You can also slice up some kohlrabi and candy cane beets like me. I used a mandolin to get my even, thin slices. She finely diced onions, I used chopped chives because I was to lazy to deal with onions. Add salt pepper, and some fresh herbs. She suggests dill, which I didn’t have, so I used thyme. Add a bit of olive oil and sherry vinegar. Then add your cream of choice. Any cream will do: single, double, creme fraiche, oatley’s creme fraiche, yogurt, whatever. Let it sit for an hour or two. I added my tomatoes just before serving because I forgot about them, but still delicious! Done and done.
