
My veg box often provides me with the whole veg providing an opportunity to make use of as much of the veg as possible. Recently I’ve had broad beans which is not something I would normally buy fresh, and not something I normally encounter in its entirety. A friend of mine pointed out that you can also eat the pods, so I decided to try out his suggestion of dredging them in flour and frying them. So tasty!
Word of warning. They are addictive. Also, young pods are much easier to eat. The old ones are a bit of a stringy mess. Think eating artichokes leaves. The kind of unsightly mess that requires an indelicate attempt to dispose of the fibrous remains after you have devoured the yummy flesh. In any case, here is what I did.
Half and slice a handful or so of empty pods on an angle. Make a spiced flour mix and put that in a bowl. I used maybe 1/4c of flour, and a teaspoon each of smoked paprika, onion powder, garlic powder, and a pinch of salt, and pepper. In another bowl, put some non dairy or dairy milk. Dip your pods in the milk, and toss them in the spiced flour. Heat about 1 inch of neutral oil (I used veg oil) in a deep pan, drop in one pod, and when it bubbles and rises to the surface, add the rest of the pods. Fry until golden brown, turning to make sure they’re all evenly cooked. Done and done.
