
My second adventure with broad beans was a marvellous success! I’ve been a big fan of smashed avocado ever since my veg box provided me with lovely avocados and lemons. This week I decided to combine my avocado and lemons with some broad beans, as well as some mint and chives from my pandemic garden, for a yummy dip/spread. Super simple, just toss all of this in a tiny food processor, or a jar with a hand mixer, or blender with some salt and pepper and olive oil, and done! I used some lettuce and tomatoes from my veg box and thyme from the garden for a pretty sandwich.
