busy with beans

One of the things that is really terrific about my veg box is they give me things I don’t normally buy, like broad beans. They also often provide me with a lot more of the plant than just the usual parts of the veg that you get in the store or the package, which means you get the whole veg experience and sometimes a lot more veg to play around with. So, when the broad beans arrived, it was a bit of an adventure. I made two things with broad beans. This is the first, it is a big mess of tomatoes, broad beans, courgette/zucchini, lemons, and croutons I made with the last legs of my sourdough loaf. Here is what I did.

Shell your broad beans. Steam them or blanch them for about 5 mins. Drain and rinse them in cold water, peel and discard the skins. I know, so tedious. Tear up your mostly stale bread. Heat up some oil in a pan and add some spices. I added some garlic and onion powder and lemon pepper, but use whatever you like your croutons to taste like. Dump your bread chunks in the pan and sauté until they look done. Put on a plate. In the same pan, add a bit more oil, dump in your chopped tomatoes and peeled broad beans. Sauté for a bit. Add your courgette/zucchini ribbons/noodles. Sauté a bit more. Add lemon, herbs (I used fresh thyme, sage, and chives), a bit more oil, and take off heat. Add your croutons, and if you’re a cheese person, some of that, and your done.
