
My veg box arrived with beautiful courgette/zucchini, lemons, and tomatoes, so I figured I’d make a quick salad and sandwich for lunch. There is nothing like a tomato sandwich with salt, pepper, and fresh lemon thyme. The salad is lovely and fresh with a good crunch and a good way to use extra courgette/zucchini without having to bake or fry.
The salad is raw courgette/zucchini which I did as noodles in a spiralizer, but it would work just as well as ribbons using a vegetable peeler or mandolin. I made a dressing using about 1/4c oil, 1/2 lemon, a squeeze of tomato paste, a pinch of garlic powder, lemon pepper, and ancho pepper flakes. And a sprinkle of sugar and some fresh herbs (I used thyme, chives, and oregano). Whisked it all together and tossed it with the courgette/zucchini.
