
Since we’ve been having a stretch of hot days, I’ve been so happy for the greens in my veg box that have gone into some simple salads. This is baby kale, broccoli, and giant couscous salad. You can use any smallish noodley things like orzo or tiny pasta shapes, but I sorta love giant couscous and I finally found some after hunting for it for 8 weeks. In any case, here is what you do.
Make your noodles or giant couscous. While the carbs are cooking, chop up your kale and broccoli into bite-sized salad pieces. Heat up some olive oil in a pan. Add the pepper you like (Aleppo, hot pepper flakes, Korean chilli pepper powder, whatever), salt, and some garlic and ginger (fresh, powder, paste, whatever you’ve got) and stir it around. Add your greens and sauté on medium/high until everything is a beautiful green and cooked the way you like your greens. If the pan looks too dry or if things look like they are burning, add a splash of water. Take the pan off the heat, add a bit of oil, non-dairy or dairy butter, and the drained couscous and give it a big stir. Add some more of anything if it needs it, spice-wise. You can add a squeeze of lemon of lime if you like. Done.
