happy mash

I went to bed thinking about colcannon (a bit of Irish happiness made of creamy mashed potatoes and cabbage) and woke up thinking of colcannon, so decided to see if I could make something like it for lunch.

This isn’t exactly colcannon. Well, it isn’t colcannon at all really, since I decided to branch out from just potatoes and use a lovely parsnip and half a nice celeriac in my veg box. Also, I didn’t have cabbage, but my veg box people gave me gorgeous spring greens, so I figured I would use some of that. Here is what I did.

This is what spring greens look like, if this is a new green to you

Cube all the root veg (I used 2 potatoes, a parsnip, and half a celeriac) and put in a pot of salted water and boil until soft enough to mash. While the root veg boils, shred half the spring greens and fry it up with some oil, salt, and garlic powder. If you like a lot of green, go ahead and fry the lot. Drain the root veg and roughly mash it with about 1/2c of cheese (use what you have/like non-dairy or dairy, use more cheese if you like) and a bit of non-dairy or dairy butter. If it doesn’t seem to be mashing well, add a splash/spoon of non-dairy or dairy milk or yogurt (whatever you have around). Mix in the greens. Add salt and pepper to taste. Done!
