
My veg box provides me with all the lovely greens, but also all the comforting root veg as well, because sometimes you just want the casserole dish equivalent of a hug. And this is kinda that.
Although this takes a long time to bake, it is super easy and makes the most out of some great root veg. I used 2 medium/large potatoes, 2 medium/large parsnips, 1/2 onion, about 300ml of whatever cream you have kicking around (oatley’s oatmilk cream, single cream, double cream, 10%, 18%, 35% cream, some combo of what you have, whatever), and about a cup of dairy or non-dairy cheese you like, the more melty the better. Here is what you do.
Preheat your oven to 180C/350F and grease a large pie plate or casserole dish. Use a mandolin or knife to slice the parsnips, potatoes, and onion very thinly. Layer half the parsnips, potatoes, and onion, season with salt and pepper, sprinkle half the cheese on top, and drizzle half the cream over it all. Repeat with the rest. Cover with foil and bake in the oven for about an hour. Remove the foil and continue to bake for 20 mins until golden. It is kinda nice on a rainy day.
