parsnip potato soup

This week I had some really lovely parsnips in my veg box so I decided to make some soup. This nice creamy soup is an easy one that comes together with 2 big parsnips chopped, a big potato chopped, half an chopped onion and some olive oil, salt and pepper in a big pan in a hot oven (200C/400F) for maybe 30-40 mins. When your veggies are done add 300 ml of hot water or hot stock, hit it all with an immersion blender or dump it all in the blender with a squeeze of lemon juice, garlic powder, and about a cup of non-dairy or dairy of your choice to get it to your desired consistency and purée some more. I used oatmilk in this recipe. Stir in some herbs of your choice. I used some tarragon, parsley, and chives, and a splash of truffle oil (or chilli oil or harissa or pesto would be nice). Salt and pepper to taste! Done and done!
