
Here is something super easy if you have rhubarb! Rhubarb compote. It is kinda like jam, except it isn’t really jam and you make it in the oven with no effort. It is yummy on crumpets (seen here), also on yogurt.
This version is rose, hibiscus, rhubarb compote. Why so fancy? Okay, I am a bit fancy and have rose petals kicking around. However, I’ll be honest, my rhubarb was mostly green and not red, so when it came out of the oven, it wasn’t a great visual. At all. Especially with some random rose petals. So I added some dried hibiscus gifted to me from my lovely friend Sabine for some pretty colour and whimsy. To make this just chop up your rhubarb into pieces (maybe 500g or so) and put it in a baking pan with some sugar (about 75g or a 1/3c or so depending on how sweet you like it). Then add flavourings you like or have around. I added rose petals, but ginger, orange or lemon zest, or vanilla would also be nice. Bake for about 30 mins, maybe 40 depending on your oven. Smells so nice!
